What’s cooking weekly menu (1/17 to 1/23)

Woe is me.  I had some new recipes and adventurous ingredients in line for this week’s menu, but post-holiday finances sometimes have a sizable impact on what comes out of our kitchen.

This was one of those weeks where the ‘extra stuff’ (like  homemade bouillion and delicious Tempero Miniero) will just have to wait a few days.  Behold, the pared down version of this week’s menu – which will really be just as good, I’m just pouting for lack of Tempero:

Breakfast

  • Cornbread Waffles with berry sauce (waffles from Vegan Brunch + perfect for throwing in the toaster – the berry sauce is something I threw together)
  • Cherry Almond Muffins (loosely based on a recipe from Vegan Brunch, man I love that cookbook)
  • Raisin, date and cinnamon oatmeal (cheater breakfast out of a Quaker Oats bag with honey and hemp milk)
  • Kashi U Cereal (obnoxiously good with plain almond milk)

Lunch

  • Chickpea sandwiches on whole grain bread with tomatoes, spinach, Vegenaise and Spicy Porter Mustard
  • Vegan chili with seitan sausage with cornbread waffles (chili based on recipe from teaNY cookbook)
  • Seitan sausage sandwiches on fresh bolillos with tomato sauce and rice cheese (sausage recipe based on Vegan Brunch Italian sausages)
  • Adam’s homemade tortillas with Mexican rice, black beans, avocado, tomatoes, cilantro and lime

Dinner

I especially like this week’s menu as it uses a lot of what we already have in the house and will use up everything we picked up at the grocer’s this week – but will still taste good enough to eat.  Which… well, is the whole point.

Note the repeated appearance of the seitan sausages (soooo good).  Each batch makes 4 sausages which I can stretch pretty far – so you’re looking at a can of beans, a cup or so of vital wheat gluten and some spices for the basis of 4 meals (sometimes with leftovers).  Say it with me now…  thriftily delicious!!!  :)
